somoli samosa recipe

Somali Samosa


Makes 48 servings

A beefy version of a mainly vegetarian dish. Can be made without the meat and can be spiced up by adding more spice and peppers for healthier tastebuds.

Ingredients
5 medium potatoes
2 medium carrots
2 cups lean ground beef
2 tsp garam masala
2 tsp yellow curry
2 tbsp chicken soup base
1 large onion
2 large jalapeno pepper
1 cubanelle pepper
1 hot yellow pepper
48 wonton wraps
2 tbsp flour
6 tbsp water or enough to make paste for sealing wontons
1 Canola oil for frying
Directions
Preparation:

Set aside flour and water for paste to seal wonton wraps later.

Boil potatoes (you can skin them prior to cooking or you can do what we do and boil them skin and all then allow them to cool and the skins slip right off).

Shred carrots, finely chop peppers and onion.

Cook ground beef well, drain all fat. Rinse well under running water.

Method:

Add all ingredients except flour and water to pot and blend well.

Place a generous tablespoon of mixture onto a wonton wrap and moisten 1/2 inch around all four sides of wonton with flour paste. *Paste should be a little looser consistency of pancake batter for best results.

Fold corner of wonton wrap over to meet opposite corner of wonton wrap. This creates a triangle.

Seal firmly by pressing all edges together.

Set aside and continue until all mixture and wonton wraps are used.

Heat deep fryer to 375degrees.

When deep fryer is ready, place 3 - 4 samosa in and cook until light golden brown.

Remove from fryer and place on paper towel to drain excess oil.

Allow to cool for about 10 - 15 minutes before eating.

CONTENTS WILL BE EXTREMELY HOT!
